Mustache Rye'd IPA, Take 2.



A couple of months ago I brewed by 1st Mustache Rye'd Pale Ale recipe.  I really wasn't to excited with the results.  I felt the glacier hop didn't work well in the lighter "Pale Ale" style.  I ended up dumping about 3/4 of the batch.  My only other experience with Glacier was in my Blackout IPA, which I loved.  So I am back at the drawing board to create something new.  I wanted to create a 7% +/- IPA this time, with a much higher % of Rye Malt.  The goal was 35% Rye, but I backed off at the last minute and settled at 30.6% of the grain bill.




The new Mustache Rye'd IPA will feature lots of hops.  From the mash to the dry hopping.  I wanted to have Amarillo and Nelson Sauvin hops be the focus at the end of the boil into the dry hop.  Leaving Chinook and Columbus as the main bittering/mash hops. All of these hops have great spicy characteristics that should pair well with the Rye malt.  For the grain bill, I wanted to have it fairly simple, mostly 2-Row and Rye, with some body derived from some C-40 / C-80.  I've also added a little Pilsner malt into the beer for cleaner taste.  As for the yeast, good old WLP001 should work great.  I thought about WLP002, but I feel it might muddle up the beer a little.  With this much Rye malt, I wanted the yeast as a clear/clean as possible.

I am really looking to get the Nelson Sauvin Hop flavors controlling this beer.  This hop varietal is hard to find, having this opportunity to rebrew this beer will be difficult unless Nelson Sauvin becomes more accessible here in the states.
